The Fairy Wren Cottage Bliss Ball Recipe
200 grams Almond Meal
100 grams Cashew Nuts
2 tablespoons organic chia seeds
2 tablespoons cacao powder
1/4 cup dried goji berries (soak in boiling water for 10 minutes, drain & squish any remaining liquid out)
2 tablespoons coconut oil
1 teaspoon vanilla extract
Place all the dry ingredients into the blender and blitz until they are in very small pieces.
Add the vanilla extract, goji berries and coconut oil.
Continue blitzing in the food processor until the mixture starts to fall in on itself.
Turn your blender off at the power point (safety first) and take a little mixture on a spoon and test to see if it forms into a ball easily. If the mixture is too dry it won’t form a ball, add an extra teaspoon of vanilla. I find this sometimes happens when the house is very warm, due to a hot day outside or if the wood heater is on.
Roll the mixture into small bite size balls. Store in an airtight container in the fridge. Try not to eat all at once.
*If we don’t have any goji berries we use 1/4cup of dried figs instead. Top and tail the figs and chop them into very small pieces before putting them in the blender, this just helps to prevent the figs from getting stuck on the blender blade.
